Description:
This is a New Castle clone with a very smooth finish. My best Brown Ale to date.
Ingredients:
* 3.3 # Briess Golden Light Liquid Malt
* 3.3 # Briess Sparkling Amber Liquid Malt
* 1 # Turbinado Sugar
* 1 # White Clover Honey
* 8 oz. Dark Crystal Malt
* 4 oz. Chocolate Malt
* 4 oz. Wheat 80 L
* 1 oz. Tettnang Hops @ 60 Minutes
* 1 oz. Williamette Hops @ 5 Minutes
* White Labs Yeast - Burtons Ale
Primary Ferment: Primary Fermentation for 7 days.
Secondary Ferment: Secondary Fermentation for 14 days.
Procedure:
Steep crushed grains for 30 Minutes @ 155-165 F
Add Malt Extract and bring to boil
Add Tettnang Hops Immediately
Add Williamette Hops with 5 Minutes to go
Cool, top water to 5 gallons
Pitch Yeast
