Ingredients:
* 6 lb. Amber Extract Syrup
* 0.88 lb. Medium Crystal
* 0.75 lb. Flaked Barley
* 0.5 lb. Aromatic Malt
* 0.5 lb. Chocolate Malt
* 0.5 lb. Special B Malt
* 0.25 lb. Black Patent Malt
* 2.75 oz. Willamette @30 minutes into boil
* 0.25 oz. Centennial @10 minutes into boil
* Wyeast 1056 American Ale
* 5 Vanilla Beans
Primary Ferment: 7 day
Secondary Ferment: 7 days
Procedure:
In stock pot combine 1.5 gallons of cold water and grains(in a nylon straining bag) and bring to an almost boil for 30-40 minutes. Remove grains and add malt extract and first hops; continue boil for 60 minutes. After 30 minutes add hops. After 10 minutes add finishing hops. Remove from heat. Rack completed mixture to very cold water(make five gallons) into carboy. When mixture is around 68 degrees pitch yeast. After vigorous primary fermentation subsides (about 7-10 days), rack to secondary and continue fermentation for another 7-10 days. Bottle with bag of corn sugar dissolved in 2 cups of cold water.
During the brew session, chop up five vanilla beans, and put them in a sealable glass bowl. Pour white rum (or another neutral sterilizing alcohol) into the bowl to just above the level of the beans. Seal the bowl and let sit during primary. Add the beans to the secondary fermenter before racking.
